Beer, Wine, Whiskey & AI is an independent blog about where the drinks industry meets artificial intelligence. It covers fermentation and distillation forecasting, production analytics, AI-assisted recipe and blend design, sensory/tasting models, and the data science that helps producers make better beer, wine, whiskey, and mead.
What you’ll find here
- Fermentation, distillation & process — how machine learning predicts attenuation, timing, maturation, and off-flavors across brewing, winemaking, distilling, and meadmaking.
- Production analytics — what data is worth collecting in a brewery, winery, distillery, or meadery, and what to do with it.
- AI in the tasting room & DTC — demand forecasting, customer insight, and direct-to-consumer for drinks producers.
- Plain-English explainers — practitioner-focused, no hype.
About Ankur Napa
This blog is written by Ankur Napa, who works and writes at the intersection of the drinks industry, data, and artificial intelligence — across beer, wine, whiskey, and mead. The angle here is deliberately practical: where machine learning, analytics, and modern data and ERP tooling genuinely help producers make and sell better drinks, and — just as important — where they fall short.
It grew out of ongoing research into the beverage industry, ERP systems, AI/ML, and data analytics. Posts cite their sources and show when they were last updated, so you can judge what’s current.

Privacy
This is a personal blog, and I try to respect your privacy.
What’s collected. To understand which posts resonate, this site uses privacy-conscious analytics that record anonymous, aggregate data only: approximate location (country/city, derived from IP — never the full IP), the date and time of a visit, which pages were viewed, how visitors arrived (for example from a search engine or a shared link), and general device and browser type.
What’s not collected. I do not collect your name, email, or any information that personally identifies you, and I never see who you individually are. I do not sell, share, or trade any data, and there are no ads or third-party advertising trackers.
Cookies. Depending on the analytics provider in use, a small first-party analytics cookie may be set to tell new visits from returning ones. It is used only for aggregate statistics. You can block or delete cookies anytime in your browser settings, and the site will work exactly the same.
Your choices. You can opt out by enabling “Do Not Track” or Global Privacy Control in your browser, using a tracker-blocking extension, or browsing in private/incognito mode. Any of these stops the analytics from recording your visit.
Questions or requests. If you’d like to ask about this data or request its removal, open an issue on the GitHub repository.
