The flavour comes from the yeast, not just the recipe

Most of a beer’s fermentation-derived character is yeast metabolism responding to its environment. Esters such as ethyl acetate read as floral or, when high, solventy. Higher (fusel) alcohols bring a warming, sometimes harsh note. Acetaldehyde, with a threshold near 10 mg/L, is the green-apple marker of an unfinished or stressed ferment. These are not fixed by the grist; they move with how you run the tank.

Two relationships are reliable enough to anchor a model. Temperature drives esters up: ethyl acetate climbs from roughly 12.5 mg/L at 10 degrees C to about 21.5 mg/L at 25 degrees C. Pitching rate pushes the other way: a higher pitch rate lowers esters, because less yeast growth means less of the acetyl-CoA and amino-acid traffic that feeds ester synthesis. Knowing both lets you trade them off deliberately.

Building the forecast

Measure first, then model. The core features are:

  • Fermentation temperature profile, not just a setpoint.
  • Pitching rate and yeast generation.
  • Wort oxygen at pitching, 8-16 mg/L, which sets early sterol and membrane synthesis.
  • Original gravity and the gravity curve.
  • FAN (150-220 mg/L) and total nitrogen (700-1100 mg/L).

The payoff is forward control: you see that a planned 22 degrees C ale fermentation at a low pitch will overshoot your ester target before you brew, and you adjust temperature or pitch rate to land it. Low nitrogen is worth flagging explicitly, because it raises both fusel alcohols and diacetyl, so a FAN-poor wort needs a gentler temperature to stay balanced.

A generative twist is useful at the recipe stage. Instead of asking “what will this ferment taste like”, you state the target, say a particular ethyl-acetate level and a modest fusel profile, and the tool proposes the temperature, pitch rate and oxygen that should produce it. It searches the parameter space the forward model defines and hands back a starting recipe with the trade-offs spelled out.

Where it breaks

The big caveat is strain. Ester and fusel formation are strongly strain-specific, so a model trained on one yeast does not transfer cleanly to another; you need per-strain data or, at minimum, a strain feature with enough examples. Thresholds and human perception add the second limit: a model predicts concentration, but whether 18 mg/L of ethyl acetate reads as pleasant or solventy depends on the rest of the beer and the drinker. Treat predicted concentrations as a guide that a trained panel still has to validate, and keep feeding tasting results back in.
